These bagels are done and ready to eat in 2 and a half hours ! Below you'll find a step by step guide to make them. Have fun and enjoy!

Ingredients :
For the bagels
570 g bread flour
360 ml warm water
3 tsp active dry yeast
1 tbsp maple syrup
2 tsp salt
For the boiling :
1 heaped tsp baking soda
1 tbsp maple syrup or honey
Toppings:
Sunflower seeds, sesame seeds, pumpkin seeds, roasted onions,...
Egg wash :
1 egg white beaten with 1 tbsp water
Vegan : 100-150 ml plant based milk + 2 tsp maple syrup or honey
Instructions:
Prepare the dough:
1.Combine warm water and yeast in the bowl. Let it sit for 5 minutes. Add flour, maple syrup, and salt, then mix with a fork for about 2 minutes ; the dough will appear stiff and somewhat sticky. Transfer the dough to a floured surface.

2.Knead for 6-7 minutes until it's soft.
Check its readiness by poking it—if it bounces back slowly, it's ready. Your dough should be smooth.
Grease a large bowl with olive oil, form the dough into a ball, cover, and let it rise for 60-90 minutes or until doubled in size.
The time to rise depends on the temperature of your house, the warmer it is, the quicker the dough rises.
FYI : Make sure your hands are just as dirty as mine :-)



3. After 60-90 minutes your dough will look like this.
Punch it down and divide it into 9 pieces.
Shaping :
4.Shape each into a ball and create a hole in the middle ( like the size of your index and middle finger).
Sprinkle some flour to a piece of parchment paper to prevent the bagels from sticking.
Preheat the oven to 210°C.
Water bath:
5.Boil 2 liters of water in a wide pot, whisk in honey or maple syrup and baking sode, then reduce heat. Boil bagels, 2-4 at a time, for 1 minute on each side.
Egg wash:
6.Brush with egg wash( I used a vegan one) and then cover with your chosen toppings. Place on lined baking sheets.
Baking:
7.Bake for 20-25 minute, until the bagels are dark golden brown. Cool on baking sheets for 20 minutes, then transfer to a wire rack.
8. Enjoy your homemade bagels by slicing, toasting, or topping them as you like! Store leftovers tightly covered at room temperature for a few days or in the freezer.
