Vegan Blueberry Chocolate Muffins

Elevate your snack game with these delightful plant-based blueberry muffins ! šŸ«šŸŒ±šŸ’™


Ingredients for 10 muffins:


375 gĀ Ā all purpose flour

2 tsp baking powder

2 tbsp ground flaxseeds + 5 tbsp water

100 g maple syrup

240 ml full-fat oat milk or soy milk

1 tbsp lemon juice

2 tsp vanilla extract

160 gĀ Ā blueberries

100 g peanut oil

100 g chocolate chips or chocolate chunks

1/2 tsp salt


Instructions :

1. Preheat your oven to 200°C.

2. Prepare a 12-hole muffin pan by lining it with muffin cases, and then set it aside.

3. Create a "buttermilk" by adding 1 tablespoon of lemon juice to your milk and let it sit for 5-10 minutes. Create your "flax egg" next by combining 2 tbsp ground flaxseeds with 6 tbsp water in a separate bowl.

4. Combine all the dry ingredients, which include flour, baking powder, salt, and oil, in a mixing bowl.


5. In a separate bowl, whisk together the flax egg, maple syrup, the previously prepared "buttermilk," and vanilla extract.

6. Add the wet ingredients mixture to the dry ingredients and mix until well combined.

7. Finally, gently fold in the blueberries and chocolate.

8. Bake the muffins in the preheated oven for 15-20 minutes.
